By far, the party scene from Dead Alive. It's probably the funnest, bloodiest scene ever created.

Also a notable mention is the scene in the original Dawn of the Dead, where all of those bikers are ripped apart and eviscerated by zombies.
Of course, we can't forget the axe dismemberment in The Evil Dead.

Day's scenes where the zombies are ripping soldiers apart is better than Dawn's. It's more brutal, and realistic looking. Dawn is the better movie, but Day wins in the gore department.
The only real complaint is that in Day all the really memorable scenes happen close together, towards the end. Dawn spreads it out, which makes the whole movie more enjoyable imo.
It's hard to pick a favorite, but the scene in the Stuff where, the stuff starts to come back up out of Chocolate Chip Charlie, stands out. It's not the most gruesome, or realistic ever, but it's still pretty cool.

It's that White Stuff... The Stuff used it so well. My favorite scene with it was the scene in the big rock quarry-place where you saw it like Ghostbusters 2, pulsating and rising up out of its' pool-like embankment like weird hands were coming out of it.
But, that party scene in Dead-Alive is classic. I would go with that for gore. And for blood, which I like better, and I mentioned this before in a deleted post: the Jane-Axe-Arm scene from Tenebre (1982) is jaw-dropping!
